Sopressata is an Italian style salami, so called because the salami is compressed during the production process. There are literally hundreds of variations across the country, I have made my own version taking inspiration from one which I particularly enjoyed a few years ago. It contains Red Wine, Ground fennel, smoked paprika and a little cayenne pepper. This salami is not over spiced and will appeal to those who prefer a more subtle use of chilli.

Only available as a 100g piece cut from a large salami.

13.9% Pork, fresh, backfat, raw

2.63% Salt

2.61% Wine, red

0.331% Glucose liquid, BP

0.165% Pepper, black

0.13% Paprika

0.087% Pepper, cayenne, ground

0.087% Fennel seeds

0.022% Milk, buttermilk, fluid, cultured, reduced fat
