Sopressata is an Italian style salami, so called because the salami is compressed during the production process. There are literally hundreds of variations across the country, I have made my own version taking inspiration from one which I particularly enjoyed a few years ago. It contains Red Wine, Ground fennel, smoked paprika and a little cayenne pepper. This salami is not over spiced and will appeal to those who prefer a more subtle use of chilli.
